Beignet Sunday!

The first trip Joe and I took after his deployment was to New Orleans, smack dab in the middle of Tropical Storm Karen.

We had an awesome time, but missed out on Cafe Du Monde, which is famous for their beignets. The place was SWAMPED. We couldn’t even move when we were inside! I guess there’s something about a hurricane/tropical storm that makes everyone want a beignet and coffee. Who knew?

Last week was Mardi Gras, and naturally I got all nostalgic when I ran across a box of beignet mix from Cafe Du Monde. I finally got around to making them this morning….it was totally worth the intense mess I created in our kitchen.

The box mix is really simple. 2 cups of mix and 7 ounces of water combined together in a bowl. I would suggest using less water than that, and add it to the mix as you go. It tends to get soupy and sticky easy. I also put some cinnamon and vanilla in this batch because Joe loves the combination so much 🙂

I hand rolled the dough out and cut it into small squares on a heavily floured cutting board. Using regular old vegetable oil heated to a “popping” temperature, I fried them until they were golden and puffy on both sides. After draining them on paper towel, I coated them with powdered sugar.

I also coated three dogs, our kitchen floor and myself in the process…the dogs are complaining though. They seem pretty content licking the sugar spots on the floor!
